Fast & Easy Bisquick Scallion Pancakes

Yield: 6 servings

INGREDIENTS

1 c. Bisquick
2 eggs
1 c. water 

2 Carrots
20 small Scallions


DIRECTIONS

1. Grate the carrots into thin strips.

2. Wash and chop the green parts of the scallions into 1 inch pieces.

3. Beat the eggs with the water.

4. Pour over the Bisquick in a large bowl. Mix well. It will be much thinner than the batter for American-style pancakes.

5. Mix the carrot shreds/scallions into the pancake batter.

6. Pour into oiled/heated skillet.

7. Cook until browned on the bottom and solidified/flippable. Flip and repeat.

8. Cut into triangles & serve with dipping sauce of choice.
