Ice Cream Filled ChocoChip Cookie Bites

INGREDIENTS

12 Ice Cream Scoops (any flavor) 
12 Fresh Chocolate Chip Cookies 
(homemade or store bought) 
Melted Chocolate Candy Coating
For the Chocolate Chip Cookies
3/4 c AP flour
1/4 tsp baking powder
1/3 tsp salt 1/4 cup butter, melted 
1/2 c brown sugar 
1 tsp cornstarch
1 large egg
1/4 Tbs vanilla extract

1/2 c semi-sweet chocolate chips

For the ice cream
7 oz. sweetened condensed milk 
1 tsp pure vanilla extract 
1/2 pint heavy whipping cream (chilled)


For the Chocolate Coating
Chocolate chips or melting chocolate

DIRECTIONS
For the cookies 
Adapted from: A Sparkle of Genius
1. Mix melted butter and brown sugar. 
2. Add egg and vanilla. 
3. In separate bowl, mix flour, baking powder, cornstarch and salt. 
4. Add dry mixture to wet mixture. 
If too wet, add flour by the tablespoon. 
5. Add chocolate chips to taste & distribute evenly. 
6. Preheat over to 350 degrees and cook for 8-12 minutes.

For the ice cream

1. Place the sweetened condensed milk and vanilla in a large bowl, and whisk to combine well.
2. Beat the heavy whipping cream on medium-high speed until slightly stiff peaks form. 
3. Scrape the whipped cream into the bowl of condensed milk, and fold the whipped cream in until only a few bright white streaks remain.
(optional: add chopped chilled brownies and combine gently)
4. Pour into a 2 quart freezer-safe container with a lid, and smooth the top. 
5. Cover tightly and place in the freezer until firm (at least 4 hours)

Assembly
  1. Make round scoops of ice cream onto a parchment lined pan & freeze scoop of ice cream until well hardened.
  2. Flatten completely cooled chocolate chip cookies with a rolling pin.
  3. Place a scoop of hardened ice cream on the chocolate chip cookie.
  4. Wrap the cookie around the ice cream scoop quickly.
  5. Place in freezer until hardened.
  6. Melt candy coating in microwave.
  7. Coat cookie balls with melted chocolate.
  8. Let chocolate set completely in fridge.


Storage: Store in freezer until ready to serve.
