Homemade Mint Chocolate Chip Ice Cream

INGREDIENTS

1 1/3 c. sweetened condensed milk (one 14 ounce can) 
2 – 2 1/4 tsp. peppermint extract
1 tsp. pure vanilla extract 
2 c. heavy cream 
½ c. mini semi sweet chocolate chips 
4 drops green food coloring (optional)
Chilled cut up brownie bites (optional)

DIRECTIONS

1. Place whisk & mixing bowl in freezer and heavy cream in fridge for about 15 minutes. 

2. In a separate bowl, combine sweetened condensed milk, vanilla, 2 teaspoons of peppermint extract and green food coloring. Mix well to thoroughly combine. 

3. Taste and add up to a 1/4 teaspoon more peppermint if desired.

4. Stir in chocolate chips & brownie bites (optional).

5. Remove heavy cream from fridge and the frozen bowl and whisk from freezer. 

6. Pour cream into the mixing bowl and beat until firm peaks form. 

7. Fold about 1/4 of the whipped cream into the sweetened condensed milk mixture until combined. 

8. Add the rest of the whipped cream and fold in until thoroughly combined. 

9. Do not stir or beat with mixer.

10. Pour mixture in to a container or loaf pan. 

11. Cover with plastic wrap or a lid. 

12. Freeze for 6-8 hours or overnight until firm. Enjoy!
