Best Salted Caramel White Chocolate Cookies EVER!

These cookies are thick, soft, moist and omg the flavors just work wonders on your taste buds.
Before you know it you'll be reaching for another one..and another one..and another one.
At least that's what happened with me.


The white chocolate and caramel combination is a match made in cookie heaven.

And I can't even begin to describe the euphoria of biting into the gooey melted caramel center of the cookies.

Ingredients 

2 and 1/4 cup All Purpose Flour
1 and 1/2 teaspoon cornstarch
2 teaspoon baking powder
1/2 teaspoon salt
1.5 sticks of melted unsalted butter
1 cup granulated white sugar
2 teaspoons pure vanilla extract
1 cup white chocolate chips
10-15 caramel candies
1 large egg + 1 egg yolk (ROOM TEMP)
sea salt for sprinkling
Homemade or store brought caramel sauce to drizzle (optional)  

Directions

1. In a large bowl, mix the flour - cornstarch - baking powder - salt.
2. In a medium sized bowl, mix together the butter - granulated sugar.
3. Add the egg - egg yolk - vanilla into the medium sized bowl.
4. Pour the wet ingredients from the medium bowl into the dry ingredients in the large bowl.

5. Fold in 1/2 cup of white chocolate chips (and chopped caramel candies optional)

6. IMPORTANT! Chill dough for 2 hours in the refrigerator.

7. After 2 hours, take the dough out and let it sit at room temperature to soften. 

8. Preheat oven to 325 degrees.

9. Separate chilled dough into two smaller balls and press a caramel candy in the middle
and seal the edges.

10. Press the remaining 1/2 cup of white chocolate chips on top of the cookies.

11. Sprinkle sea salt on top of cookies right before baking.

12. Bake for 12 - 13 minutes if cookies are large, reduce time to 8 minutes if cookies are smaller.

13. Cool cookies completely before drizzling caramel sauce over cookies. (optional)


(NOTE: they may look slightly underbaked but they'll continue to cook on the baking trays after they come out of the oven and voilà! You will have a perfectly soft baked cookie!)
