INGREDIENTS
For the donuts - 2 ¼ c. flour
- 1 Tbs baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 c. sugar
- 1 large egg
- 2 Tbs unsalted butter, melted
- 2 oz. unsweetened chocolate, melted
- ½ tsp vanilla extract
- ½ c. buttermilk
- 1 Tbs red food coloring
- 4 oz white chocolate
- 6 Tbs butter
- 2 c. powdered sugar
- 6 Tbs milk
DIRECTIONS
- Preheat oven to 350. Spray two mini muffin tins and set aside.
- For the donuts: In a small bowl, combine flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, combine egg and sugar.
- Add melted butter and melted chocolate.
- Stir in vanilla and buttermilk.
- Gently stir in flour mixture a little at a time. Stir just until flour has just been incorporated.
- Scoop up a small about of batter, roll it into round balls and fill each muffin cavity 3/4 full.
- Bake for 10 minutes. Let donuts cool in pan for 5 minutes.
- For the white chocolate glaze: Melt butter and chocolate in the microwave in 30-second intervals.
- Whisk in powdered sugar.
- Add milk until glaze is at desired consistency.
- Using a fork, dip each donut into glaze, turning to coat.
- Let excess drip through fork tines and let set on a cooling rack to set.
- After donut coating has set, dip each donut again in the glaze.
