Red Velvet Donut Holes w/ White Chocolate Glaze

INGREDIENTS
For the donuts 
  • 2 ¼ c. flour
  • 1 Tbs baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 c. sugar
  • 1 large egg
  • 2 Tbs unsalted butter, melted
  • 2 oz. unsweetened chocolate, melted
  • ½ tsp vanilla extract
  • ½ c. buttermilk
  • 1 Tbs red food coloring
For the Glaze
  • 4 oz white chocolate
  • 6 Tbs butter
  • 2 c. powdered sugar
  • 6 Tbs milk
DIRECTIONS
  1. Preheat oven to 350. Spray two mini muffin tins and set aside.
  2. For the donuts: In a small bowl, combine flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, combine egg and sugar. 
  4. Add melted butter and melted chocolate. 
  5. Stir in vanilla and buttermilk.
  6. Gently stir in flour mixture a little at a time. Stir just until flour has just been incorporated.
  7. Scoop up a small about of batter, roll it into round balls and fill each muffin cavity 3/4 full. 
  8. Bake for 10 minutes. Let donuts cool in pan for 5 minutes.
  9. For the white chocolate glaze: Melt butter and chocolate in the microwave in 30-second intervals.
  10. Whisk in powdered sugar. 
  11. Add milk until glaze is at desired consistency. 
  12. Using a fork, dip each donut into glaze, turning to coat. 
  13. Let excess drip through fork tines and let set on a cooling rack to set. 
  14. After donut coating has set, dip each donut again in the glaze.
