Caramel (or Peanut Butter) Cookie Dough Pretzel Bites


Changing things up a bit and adding some candy/bites recipes in here and there! Missing my bar recipes already though! But these make a create TV snack or road trip snack to munch on! And don't they look just so adorable?

You could easily tie these up in a clear baggie with a pretty ribbon and gift these for any occasion! They make great delicious little gifts!

Yield: 20 mini pretzel bites

INGREDIENTS

1/8 c. butter, softened
1/4 c. brown sugar
1/8 c. white sugar
1/8 c. caramel
1/4 teaspoon vanilla extract
1 tsp milk
1/2 c. flour
40 pretzels
4 oz. chocolate melting chocolate
4 oz. white melting chocolate
sprinkles (optional)

DIRECTIONS

1. Cream the butter and sugars in a mixing bowl until smooth. 

2. Add the caramel, vanilla, and milk and beat again.

3. Slowly beat in the flour until a dough forms.

4. Roll the cookie dough into 20 balls.

5. Place a ball on top of 20 pretzel twists.

6. Top with another 
pretzel twist and press down gently.

7. Place the chocolate melting chocolate in a microwave safe bowl and heat 30 seconds. Stir and repeat until melted.

8. Dip half of each pretzel bite into the chocolate. Place on a wax paper lined baking sheet to dry.


9. After the bites have set up, melt the white chocolate the same way. 

10. Dip the other side of the pretzel bites in the white chocolate. Place on the wax paper lined tray and top with sprinkles. 

Keep in a sealed container on the counter for a few days. Refrigerate if keeping longer. 

*Alternatively make a creamy peanut butter cookie dough filling instead

INGREDIENTS

1/2 c. creamy peanut butter
1 tbsp softened butter
1/4 c. powdered sugar
1/2 cup brown sugar 


DIRECTIONS

1. Combine peanut butter and softened butter in a large bowl with a fork or whisk.

2. Add the sugars and mix thoroughly.
(If the filling will roll easily into balls without sticking to your hands you’re ready to go. If not, add a little more of each sugar until you reach a consistency that is easy to roll)


3. Form a teaspoon sized ball. 

4. Sandwich them between two whole pretzels. 

5. Freeze for 30 minutes.

6. Melt chocolate of your choice and dip pretzel bites into melted chocolate.

7. Return to freezer to set chocolate.

Storage: Store in refrigerator until serving.
