INGREDIENTS
1 c. granulated white sugar
2 tbsp white vinegar
1 tbsp water
1/4 c. toasted sesame seeds
2 1/4 c. skinless toasted peanuts
DIRECTIONS
1. Line an 8x8'' square pan with parchment paper or foil and lightly coat with cooking spray.
2. Combine half of the toasted sesame seeds and all of the toasted peanuts and mix to evenly distribute.
3. Lay an even layer onto the prepared pan.
4. Combine sugar, vinegar and water in a heavy bottom saucepan.
5. Cook over medium heat until it reaches 300° F on a candy thermometer. (I just let it reach to light brown color stage)
6. When the sugar mixture has reached the required temperature, carefully pour the sugar mixture over the nuts in the baking pan.
7. Smooth the surface with a spatula.
8. Sprinkle the remaining sesame seeds evenly on top and cool slightly.
9. While candy is still warm, remove from pan by lifting the foil.
10. Cut into desired size pieces and then allow to cool completely.
