Salty & Sweet Peanut Butter Pretzel Granola


Before we begin, can we just establish a few simple facts?

Peanut butter is amazing...yes? 
Salty, crunchy pretzels are amazing...yes?
And chocolate...without a doubt is amazing...yes?

So a combination of all these in one granola bar recipe is bound to be amazing...yes? ^_^

Yield: 36 granola bars
INGREDIENTS
  • 4 c. Toasted Rolled Oats
  • 1 c. Rice Krispies Cereal
  • 2 c Pretzel Sticks broken into thirds or smaller (reserve 1/2 cup for topping)
  • 1/2 c. Butter
  • 1/2 c. Brown Sugar
  • 1/2 c. Honey
  • 1/2 c. Creamy Peanut Butter
  • 1 Tbsp Vanilla Extract
  • 1/2 c. Chocolate Chunks (or Chips)
DIRECTIONS
  1. Place rolled oats, rice krispies cereal, & all but 1/2 cup of the broken pretzel pieces into a bowl.
  2. Heat butter, brown sugar, honey, & peanut butter in a saucepan over medium heat. Boil lightly for 2 minutes. 
  3. Remove from heat, let cool slightly & stir in vanilla
  4. Pour wet mixture into dry ingredients & fold gently to coat all of the dry mixture. 
  5. Press firmly into a greased 9 x 13 inch pan with either a wet spatula or dampened wet hands.
    (the more firmly and longer you press, the less likely the bars are to fall apart!)
  6. Sprinkle the top with chocolate chunks & reserved 1/2 cup of pretzel pieces & gently press into the granola bars
  7. Preheat oven to 350F and bake for 10-15 minutes. (keep an eye on them! Take them out when they're lightly browned)
  8. Immediately refrigerate for 30 minutes & cool completely before cutting into bars. Storage: Keep refrigerated.
