For the donuts
1. Beat the egg with the sugar.
2. Add in the milk, yeast, salt and vanilla.
3. Add 2 cups of flour and then the butter and beat until smooth.
4. Add in another 1/2 c. of the flour. It should be soft and moist but not sticky. If it's too sticky, add more flour.
5. Cover the bowl with a moist towel and let it rise for an hour.
6. Roll the dough out cut into rounds.
7. Place the rounds onto a lined baking sheet and let them rise until they are double their size.
8. Bake them for 10-12 minutes at about 390 F (200 C).
9. When the donuts are cool enough to handle, use a chopstick and poke a hole through the center of the donut and wiggle it around a little when you feel as if you've reached the middle of the donut.
For the filling
1. Beat together cream cheese, powdered sugar, and vanilla extract until smooth.
2. Add more powdered sugar if mixture is too runny, add a little bit of milk if it is too stiff.
For the topping
1. Combine the cinnamon & sugar in a bowl.
2. Melt the butter completely in another bowl.
Assembly
1. Pipe the cream cheese filling into the hole you created using a cut ziploc baggie or a pastry piping bag.
2. dip the entire donut in the melted butter & then immediately into the sugar & cinnamon mixture.
3. ENJOY! ^_^
