Turtle Cheesecake Brownies


Been crazy about bar recipes lately! But seriously, just take a look at these brownies. How could you not be crazy about brownie/bar recipes?! ^_^

They're just so easy to put together, no careful rolling and scooping like cookies require! I always get so OCD and worry that cookies will end up spreading too much and melt into each other! Anyway hope you enjoy this recipe from Hugs and Cookies!

Ingredients & Directions

For the Brownies 
1 cup butter 
1 1/4 cup cocoa powder 
2 cups sugar 
4 eggs 
1/2 teaspoon salt 
1 1/2 cups flour 

In a microwave safe bowl melt the butter.  
Stir in the cocoa and sugar. 
Add eggs. 
Add salt. 
Add flour to combine (don't overbeat!)

Pour into 9×13 pan lined with nonstick foil. 
Set aside & make cheesecake layer


For the Cheesecake 
8oz soft cream cheese
1/2 cup sugar
1/4 cup sour cream
2 eggs

Mix the cream cheese and sugar. 
Add sour cream. 
Add eggs one at a time and pour over the brownie layer. 
Use a spatula to carefully spread it. 
Bake at 350 for 30 minutes and then cool.
Make the topping.

For the Turtle Topping 1/3 cup caramel sauce (store brought or homemade recipe below)
1/2 cup mini semi sweet chocolate chips
1/2 cup salted pecans, chopped 


Drizzle caramel all over the cheesecake brownies.  
Sprinkle on chips and pecans.  

Homemade caramel sauce
1. Empty the contents of a can of sweetened condensed milk into a saucepan. 
2. Stir constantly for 10 to 12 minutes over medium heat. (Do not let it scorch.)
3. The milk will begin to deepen in color and thicken. 
4. Remove from heat when the caramel will thickly adhere to the back of your mixing spoon. (The longer you cook it, the harder it will become when it cools until it is difficult to work with. To thin it, add a small splash of milk and mix well.)
