Creamy Potato Patato Bake

INGREDIENTS
1 1/2 pound potatoes (about 4 medium potatoes)4 hard boiled eggs1 medium onion1 garlic cloveChicken seasoning6 oz deli ham1 cup sour cream1 tsp olive oilHandful of flat-leaf parsleyHandful of grated cheesesalt & pepper (to taste)

DIRECTIONS
1. Peel and boil the potatoes in salted water until tender. (you can use the microwave)
2. 
Slice the onion in half-rings, add 1 tsp of olive oil, grate in the garlic, chicken seasoning, sprinkle in the pepper and put them in a microwave-safe bowl. 
3. Cover the bowl with plastic wrap and nuke them for 4 mins at full power until they are translucent.

4. Chop up meat (ham or bacon even), hard boiled eggs, and a handful of parsley leaves. 

5. Season sour cream in a bowl with a pinch of pepper and salt. 

6. Add in the chopped meat, eggs, parsley, and onions. 

7. Mix thoroughly. 

8. Cut the potatoes in thick slices, layer them at the bottom of a lightly oiled casserole or round bowl and top them with the sour cream mix. 

9. Sprinkle grated cheese ontop.

10. Place the casserole in a preheated oven and bake at 400Fº for 20 to 25 minutes (keep an eye on it) until the cheese has melted and turned golden brown.
