Nutella Mint Chocolate Granola Bars

INGREDIENTS
  • 2 cups Rice Krispies Cereal
  • 2 cups rolled oats
  • ½ cup chopped almonds
  • ½ cup honey
  • ½ cup brown sugar
  • ¼ teaspoon salt
  • 2/3 cup Nutella
  • ¼ teaspoon peppermint extract
  • ½ teaspoon vanilla extract
  • 1 cup Andes chips
DIRECTIONS
  1. In a large bowl combine cereal, oats, and almonds. Set aside.
  2. Line a 9-x13 pan with parchment paper or foil and spray with non stick spray and set aside.
  3. In a saucepan combine honey and sugar, stirring until dissolved. 
  4. Add in Nutella and let mixture come to just a boil for 1 minute.
  5. Remove from heat and stir in extracts. 
  6. Pour hot mixture over cereal mixture and stir until it is all combined. 
  7. Let stand for 10-15 minutes before adding mint chips. 
  8. Press mixture into prepared pan with a wet spatula or wet fingers. (the longer you press the more likely the bars will stay together)
  9. Chill in fridge for at least 2 hours
  10. Cut into bars.
