- 2 cups Rice Krispies Cereal
- 2 cups rolled oats
- ½ cup chopped almonds
- ½ cup honey
- ½ cup brown sugar
- ¼ teaspoon salt
- 2/3 cup Nutella
- ¼ teaspoon peppermint extract
- ½ teaspoon vanilla extract
- 1 cup Andes chips
DIRECTIONS
- In a large bowl combine cereal, oats, and almonds. Set aside.
- Line a 9-x13 pan with parchment paper or foil and spray with non stick spray and set aside.
- In a saucepan combine honey and sugar, stirring until dissolved.
- Add in Nutella and let mixture come to just a boil for 1 minute.
- Remove from heat and stir in extracts.
- Pour hot mixture over cereal mixture and stir until it is all combined.
- Let stand for 10-15 minutes before adding mint chips.
- Press mixture into prepared pan with a wet spatula or wet fingers. (the longer you press the more likely the bars will stay together)
- Chill in fridge for at least 2 hours
- Cut into bars.
