Chocolate Buttermilk Donuts w/ Raspberry Cream Cheese Glaze

INGREDIENTS
  • 2 c. flour
  • 3/4 c. sugar
  • 1/2 c. cocoa powder 
  • 1 tsp baking powder
  • 1 tsp baking soda 
  • 1 tsp salt
  • 3/4 c.+ 2 Tbsp buttermilk
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 Tbsp melted butter
  • 3 oz. cream cheese
  • 5 Tbsp seedless raspberry jam
    (or any other jam you'd prefer)
  • 3/4 c. powdered sugar
  • 2 Tbsp cream or milk or half/half
  • Fresh raspberries, optional
DIRECTIONS
  1. Preheat oven to 325°. Grease donut pans.
  2. Combine flour, sugar, cocoa powder, baking powder, baking soda and salt.
  3. Add buttermilk, eggs, vanilla and melted butter. Stir well.
  4. Fill each donut well about 3/4 full.
  5. Bake 10-11 minutes. Cool before adding glaze.
  6. Microwave cream cheese for 15 seconds to soften. 
  7. Add jam/fruit spread, beat together until smooth.
  8. Add powdered sugar and cream, mix well. 
  9. Glaze cooled donuts, garnish with fresh fruit/raspberries, if desired.
